Avocado Mint Chocolate Chip Ice Cream

Yes! A guilt-free dessert with superfoods that may have you licking your bowl! With simple ingredients, enjoy a summer evening indulging in a guilt-free delight. Avocado Mint Chocolate Chip Ice Cream with coconut milk, avocados, mint leaves, peppermint extract, rice syrup, cacao nibs, and a dash of vanilla essence - how can you go wrong?

This dessert calls for rice grain syrup. Rice syrup is a delicious natural sweetener that adds the perfect sweetness to any dessert. Processed naturally from whole cereal grains, rice syrup has a light delicate flavor and is golden in color. It may also be called rice malt or yinnie syrup, which has a pearly color.

Rice syrup is gluten free and provides a healthy way to sweeten breakfast cereals and herbal tea. A perfect choice over artificially refined sugars!

Utensils Needed:

* Spoon

* Blender

* Freezer-safe container

* Ice cream maker

Ingredients:

  • 2 (13.5 ounce) cans Native Forest unsweetened organic coconut milk refrigerated overnight
  • 2 large ripe avocados peeled and diced
  • 10 tablespoons rice syrup or other natural sweetener
  • 1/4 cup of fresh mint leaves chopped
  • 1-2 tablespoons peppermint extract
  • 1 teaspoon of vanilla essence
  • 1/2 cup Navitas Naturals organic raw cacao nibs

Preparation:

  1. Open the coconut milk cans and scoop the cream into a blender.
  2. Add avocados, rice syrup, peppermint, vanilla and fresh mint to blender.
  3. Blend ingredients until smooth.
  4. Then add the cacao nibs and stir in with a spoon.

Without an ice cream maker:

  • Pour the ice cream mixture into a freezer-safe bowl and freeze for about 3 hours.
  • Mix well every 30  minutes.
  • Scoop into bowls to serve and enjoy!

With an ice cream maker:

  • Pour mixture into your ice cream maker and prepare the ice cream according to the manufacturer's instructions.
  • Serve right away.
  • Or transfer the mixture to a freezer-safe container.
  • Cover and freeze ice cream until ready to be served.
  • Let ice cream thaw for 10 to 15 minutes before serving
